Our family has been hand turning raviolis for generations. Our most cherished Christmas tradition all come together to make raviolis for Christmas Day. Years ago, my Nonno handcrafted a heavy duty, stainless steel ravioli cutter that I unfortunately misplaced during a move… since then we have tried all sorts of pasta cutters. If they could seal, they did not cut; if they could cut, the seal was poor, and the ravis fell apart during cooking. Many of the tools couldn’t hold up past a season, were flimsy and took an extreme amount of pressure to cut. This year, we were fortunate enough to find this pasta cutter. It’s fabulous.
The Pasta wheels, Gnocchi board, and Mattarello are all a work of art. Absolutely gorgeous!! Can’t wait to use my pasta tools this weekend!!!!
